Who doesn’t love peanut butter cookies? They are packed full of flavor, they are crunchy on the outside, soft on the inside. But what makes these cookies stand out from the rest? They only have 4 ingredients and are gluten free! They are so easy to make they will become your go to favorite for curing that sweet tooth! Seriously, they take about 5 minutes to prep, then about 10 minutes to bake, this is one of those recipes you can make at midnight when a peanut butter craving hits! It’s also a great recipe to use to introduce the kiddos to the world of baking. Just wait and see their eyes light up when they taste their creation!

Ingredients

  • 1 cup crunchy peanut butter
  • 1 cup granulated sugar
  • 1 egg lightly beaten
  • 1/2 cup peanut butter chips

Instructions

  • Preheat oven to 350°F and line baking sheet with parchement paper (if you don't have any you can just lightly grease a baking sheet).
  • Add peanut butter, sugar, and egg into a bowl and mix well. Add peanut butter chips and mix.
  • Using either a spoon or a cookie scoop, drop cookies about 2 inches apart on baking sheet. Press down with a fork and bake for 9-11 minutes, until the outside edges start to turn golden brown. Let cool for a few minutes and enjoy!

Notes

I love crunchy peanut butter so that’s what I use for this recipe but it can easily be exchanged for smooth peanut butter.
Try these with chocolate chips instead of peanut butter chips, they are amazing!
