Chipotle Chicken Quesadillas

Last year my fiance and I decided we wanted to start eating healthier. This began our journey to continue to eat what we liked, but make it as healthy as possible. This made being healthier not feel like a diet, just a better way to cook. This quesadilla recipe is a prime example of how we’ve achieved a healthier lifestyle without sacrificing the taste of the food. At only 273 calories and 37 carbs, you can enjoy this without feeling guilty about it. Plus, this quesadilla is just big enough to have as lunch, or you can make it as a snack or appetizer to share with a friend.

Chipotle Chicken Quesadillas

Ingredients

  • 1 1/2 oz cooked chicken shredded
  • 2 xtreme wellness tortillas
  • 1 oz fat free shredded cheddar
  • .5 tsp unsalted butter
  • 1 oz yellow onion thinly sliced
  • 1 tbsp chipotle cream sauce
  • 1 pinch salt
  • 1 cooking spray

Instructions

  • In a small pan, heat butter until it starts to bubble.  Add onions and pinch of salt, stirring frequently until caramelized.  Set aside.
  • Heat a square griddle pan on medium high heat. Lightly spray with cooking spray and put one tortilla on griddle.  Spread chipotle cream sauce evenly on tortilla, then add shredded chicken, cheese, and caramelized onions evenly.  Top with other tortilla and press down gently.
  • After 2-3 minutes, the bottom tortilla should be golden brown.  Flip tortilla and let cook 1-2 minutes more, until the tortilla is also golden brown.
  • Remove from heat, cut into 8 slices, and enjoy!

Notes

Not all tortillas are created equal. We have tested many kinds and the Ole Mexican Ole Xtreme Wellness! Tortilla Wraps are our favorite, but they are difficult to come by. We have only found them at some Walmart and Sam’s Club locations, as well as on Amazon.  They also offer various flavors like tomato basil and spinach so you can pick and choose which ones you want your tortillas on.  We picked whole wheat for this recipe.
This recipe gets even easier if you are going to cook it for a few days in a row (trust me they are that good!), try making the caramelized onions in one batch instead of every time you cook this.
We keep pre-portioned rotisserie chicken in the freezer at all times, making this meal super easy. Try buying a whole rotisserie chicken and doing this, it makes quick healthy meals like this a no brainer.
