Apple crisp is such a classic fall dessert, perfect to warm up a cooling night! We love the combination of sweet apples, spicy cinnamon, and crunchy oats! Top with a little vanilla ice cream and we are in heaven! This recipe uses instant tapioca to help absorb the juice from the apples without giving you a bland, floury liquid like some apple crisps. We also pack on the oat topping for a little extra crunch!

Ingredients
Apple Mixture
- 8 cups granny smith apples about 4-5 large apples
- ½ cup brown sugar packed
- 2½ tbsp instant tapioca
- ⅛ tsp salt
- ¾ tsp cinnamon
- ⅛ tsp nutmeg
- 1 tbsp lemon juice
Apple Crisp Topping
- 1 tsp lemon zest about 1 small lemon
- ⅔ cup quick-cooking oats
- ½ cup all-purpose flour
- ½ cup brown sugar packed
- ⅛ tsp baking soda
- ⅛ tsp baking powder
- ¼ cup butter melted
Instructions
Apple Mixture
- Preheat oven to 350°F and lightly grease a deep 8"x8" baking dish (I like to use a Pyrex baking dish for this because it's the perfect depth).
- Peel and core apples. Chop in cube, about ½" in length. I usually cut the apples in quarters, then slice lengthwise into 4 slices, then cut each slice into 3 parts. You can cut it bigger or smaller based on personal preference, just keep in mind the cooking time will change slightly.
- Mix all ingredients together and pour into baking dish. Keep in mind that you need to zest the lemon, so I will zest it in a separate bowl, then extract the lemon juice for the apple mixture.
Apple Crisp Topping
- Mix all ingredients together, then spread evenly over top of apples. Bake for 50-55 minutes, until the topping is browned and the apples are easily pierced. Let cool for a few minutes before serving. Top with ice cream if desired and enjoy!
