Using a chilled mixing bowl and whisk attachments, beat cream until peaks are just forming. Add powdered sugar, cinnamon, and vanilla extract and continue to beat until peaks form. The consistency will be so that you can take a spoon full of the whipped cream and turn it upside down without it falling off. Make sure not to over-beat the mixture, however, since that would create butter.
All done! Refrigerate until ready to use.

This whipped cream can be stored for up to 3 days in the refrigerator and will continue to hold it's shape! Perfect for making a day ahead of time when hosting a get together!
