Sprinkle cajun seasoning on ribeye, rubbing it evenly over the steak, including the sides. Place in container or plastic bag and let rest in the refrigerator for 24 hours.
Pull steak about 25 minutes prior to cooking to bring it to room temperature. Put steak on preheated grill, only turning steak once during cooking, allowing the seasoning to create a crust on each side. Pull steak off the grill when it is about 5° from preferred temperature, then let rest for 5-10 minutes. Enjoy!

This recipe will work with many different kinds of steak like sirloin and NY strip, but a good aged ribeye is our favorite. Cooking time will vary based on the thickness of the steak and what internal temperature you are cooking it to (rare, medium rare, medium, etc). Use a grilling thermometer to check the internal temperature to ensure proper cooking times.This steak doesn't need to be marinated a day ahead, but we think the flavors are better when it rests. If you are pressed for time you can season the steak, then let it sit for 25 minutes to bring it up to room temperature, then grill.
