Preheat oven to 425°F and lightly coat large baking sheet with cooking spray. Cook pasta according to package instructions.
Clean chicken breasts of excess fat or gristle, then pound to uniform thickness. Your chicken should be able ½ thick when done. Sprinkle each side of the chicken with salt, pepper, and cayenne pepper.
Mix the remaining salt, pepper, and cayenne with flour in a dish large enough to fit individual chicken breasts into. Set aside. In a separate dish, beat eggs with 2 tbsp water, then set aside. In the final dish, add bread crumbs.
Take each chicken breast and dust with flour until well covered. Gently dip in egg mixture, letting excess drip off, then coat with bread crumbs. Add to baking sheet and repeat until all chicken is breaded. Lightly spray top of chicken with cooking spray.
Bake for 20 minutes, flipping half way through. While chicken is baking, heat tomato sauce. Remove the chicken from the oven and add 2-3 tbsp pasta sauce to chicken, then add ¼ of mozzarella to the top. Bake for an additional 3-4 minutes, until cheese is melted through.
Serve with your favorite pasta and remaining sauce, topping Chicken Parmesan with a little Parmesan cheese. Enjoy!
