Easy Roasted Green Beans

I absolutely love green beans and grow tons of different kinds in my garden every year. Since they are so fast producing, I find that I give a ton of them away to friends and neighbors. So what’s the #1 question I get asked? How do I cook them? While you can prepare green beans so many ways, like steaming or sauteing, my absolute favorite way is to roast them and since I started eating them that way I haven’t gone back to anything else. Plus, did I mention how healthy this is? At only 48 calories per 1 cup serving!

This recipe proves that sometimes the tastiest recipes are the easiest because fresh ingredients don’t need anything fancy to let their flavor come through. What’s better than throwing something in the oven and walking away so you can focus on the rest of your meal? The key point to this recipe is to remember that you can only do this with fresh green beans as canned have way too much moisture for this to ever roast correctly.

Roasted Green Bean Recipe

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Course: Side Dish

Ingredients

  • 10 oz green beans cleaned & stems removed
  • ¼ tsp ground cayenne pepper
  • ¼ tsp salt
  • ½ tsp black pepper
  • ½ tsp granulated garlic
  • cooking spray

Instructions

  • Preheat oven to 400°F and lightly spray a baking sheet with cooking spray.
  • After completely drying your green beans, add to baking sheet and lightly spray with cooking spray. Add all the spices and mix well. Spread beans into a single layer and lightly spray top of beans with cooking spray. Cook for 20 minutes, gently stirring them half way though. Enjoy!

Notes

If you don’t like cooking spray, feel free to use 2 tsp olive oil instead.  I like the cooking spray to reduce calories. 
If you like spicy food, try doubling the cayenne in the recipe for green beans with a delicious spicy bite.
